Papaya Coconut Cake

by Monica 8 Comments

When it comes to growing your own produce, it seems to be all or nothing.I remember growing up with a large garden in the Pacific Northwest, and how if we had two tomatoes, we had two hundred.  And zucchini--HELLO! Come zucchini season, the neighbors would dodge us for fear of being handed one more bagful of zucchini.I love that.  (Not the neighbors dodging us, but an abundance of produce, obviously.)We have different produce here at our Hawaiian country home, but the same

Coconut Macadamia Crusted Mahi Mahi {Gluten Free or regular}

by Monica 8 Comments

From the ocean…to our table….Now THAT'S what we're talking about. Remember THIS 40 pound Mahi Mahi catch? Well, besides being the highlight of my boys' summer---That catch turned into approximately 32 fabulous meals!  {Four meals, each serving eight people (my family and my parents!)} We loved every one of them, and I plan to share at least one more recipe here, but today--I just have to share this Coconut Macadamia Crusted fish recipe.  It is SO good, and soooo Hawaii! If you don't have Mahi

Helping your kids Navigate Friendships

by Monica 14 Comments

Here in our home, we are entering into a new season:  My oldest son is nearing fourteen,  and the next one is almost twelve, and change is in the air.Gone are the days when our plans revolved around family, and work, and family, and family. Suddenly, almost all at once, my two oldest boys seem really focused on FRIENDS.  Friends. Friends.I know it's normal.  And healthy. I expected it. I am just really wanting to navigate through it all well.Side note: My boys are homeschooled,

Charter Fishing in Hawaii–H2O Adventures Hawaii.

by Monica 4 Comments

*winner of monday's giveaway announced at the bottom of this post.* There are some moments in life that you simply never forget.  It's always interesting to think back to the things you remember from your childhood.  Usually it is something really good, or really bad.  A special holiday, illness, the first day of school, moving, or… Catching a forty pound Mahi Mahi off the North shore of Oahu. Two of my boys just had an experience that I am certain they will never forget. (Jonah tends to

Zucchini Coconut Yogurt Bread

by Monica 5 Comments

I picked up some zucchini at the market last week, without a plan for how to use it.  I happen to LOVE zucchini, but it is one of the few vegetables that my boys do NOT get excited about.  In fact, they are pretty outspoken about disliking it, which bums me out.  I have such great memories from my childhood of picking fresh zucchini from my mom's garden every summer.  With all of that zucchini, I also remember a lot of great zucchini bread.  Mmm, I had it good I did.Well, combine those happy

A Hawaiian Night Sky

by Monica 8 Comments

Living in the country will always have some pros and cons.   After spending part of my day in Honolulu, then hauling groceries home from Costco today, the drive back to our house seemed very long. But one thing that seems to make it all worthwhile is the view from our front lanai.   Looking out over the North Shore as the sun sets has to be one of the best parts of each day.And on a cloudless night, the country sky is spectacular.  There are really no lights anywhere around us to spoil

Lowfat Oatmeal Banana Chocolate Chip Cookies

by Monica 18 Comments

I've got another banana recipe.  Maybe the best one yet. Have I mentioned that we grow lots and lots of bananas around here? I have? Ok.  Just check'n. This is actually a recipe that I shared way back. But since I just made these again….and fell in love with them again….I thought they were worthy of a fresh post. These low fat oatmeal banana cookies are brilliant on many levels: Whole wheat flour, check. Oatmeal, check. Bananas, YES please--the more the merrier. Agave nectar, such a great

Lighter Manicotti–Two Ways

by Monica 5 Comments

First of all--sorry if you tried to visit this place Sunday and found the blog MIA!  I have no idea what happened.  I tried not to panic, but it did last most of the day.  By the time I checked back, it was all here again (thank God!) but that left me no time to finish the post that I had planned for Monday.  So, I am quickly editing the recipe I thought I would share on Tuesday. But now that I think about it--Manicotti Monday?   It does have a  nice ring to it! :) Since our relatively
