I have a theory about people…

Most people fall into one of two categories:
They are either of the PASTA-persuasion, or more RICE-oriented.

Which one are you?

I like both, but I’m definitely more of a rice girl.  I LOVE rice!  I prefer it mixed up with flavors and textures…Fried rice being an absolute favorite, and coconut rice being one of our family’s favorite treats!  We always order it at Thai restaurants.

I decided it was time to make my own coconut rice, and add some tropical mix-ins as well.  I started with Jasmine rice, then mixed in a little brown rice to try to healthy-it-up a bit. (jasmine alone would probably be more authentically coconut-rice like.)  But this turned out amazing!  I love love love this recipe!  It will be a new go-to for our family meals!  It is coconuty sweet, with just enough crunch…Oh, you have try it!

Tropical coconut rice with fresh papaya and pistachios

Easy Coconut Rice with Papaya and Pistachios

Prep Time 5 minutes
Cook Time 30 minutes
Total Time 35 minutes

Ingredients

  • INGREDIENTS:
  • 1 1/3 cups chicken broth
  • 1 can coconut milk
  • 1/2 tsp. salt.
  • 2 cups rice. Jasmine or white (I mixed brown rice in, and it was fine!)
  • 1 cup chopped papaya or mango, chopped into bite-size pieces.
  • 1/2 cup pistachio nuts shelled.

Instructions

  1. DIRECTIONS:
  2. Combine chicken broth, coconut milk, salt, and rice in a medium size saucepan.
  3. Bring to boil. Lower heat, and simmer until the moisture has been absorbed.
  4. (cooking time will depend on type of rice. Jasmine will cook in about fifteen minutes, brown rice may take up to forty minutes.)
  5. Remove from heat, and let cool just enough to handle.
  6. Stir in papaya, and pistachios.
  7. Serve warm as a side dish with fish, chicken, or just about anything!
  8. (*also good served as a cool rice salad.)

    Looks yummy, thank you! Tommy and I picked up the ingredients at the grocery store today! I love rice _and_ pasta, guess I am a Carbs Girl! I love sushi rice–sweet and sticky! And pasta–salted, with olive oil drizzled on top and some Parmesan cheese sprinkled on top!

    I just printed this recipe. Looks amazing. I love that you put pistachios in there. I LOVE pistachios. Great idea. I’ll let you know how it goes when I make it. (Jasmine rice…yum!)

    Being Italian, I am probably more of a pasta person. But I really do enjoy the versatility of rice too. Sometimes I’ll even add some leftover rice to my salad!

    Um, yes please! I am obsessed with coconut anything. We don’t eat a lot of rice or pasta so it’s hard for me to choose one. I grew up eating rice all the time though nothing nearly as exotic as this. Pinned and definitely making it soon!

    Would this work with mango instead of papaya? Any papaya I’ve gotten here in New York does NOT taste good!

      yes! Mango would be perfect. In fact, mango is often firmer, so it would in some cases be even better! Try it. 🙂
