Grilled Mahi Mahi with Kikkoman Teriyaki sauce

Spring and summer are upon us, and there is nothing better than barbecuing with family and friends this time of the year.  Fish is one of our favorite things to cook on the barbecue.  I think grilling fish is the easiest, tastiest, and best way to cook fish without smelling it in the house for the next two days. 😉

A lot of people say they are intimidated by cooking fish, but I have found a way to make it quite simple.  Whether you’re preparing it with a seasoning or marinade, I find that using a sheet of aluminum foil under the fish, then wrapping it loosely and pinching it together over the top (we call it an aluminum foil “boat”) keeps the fish moist, and guarantees you don’t lose any fish down into the barbecue.

Kikkoman Teriyaki sauceKikkoman asked if we’d like to try out their Teriyaki Marinade & Sauce for our summer fish barbecues.  That was an easy yes.  Kikkoman is a staple in our fridge so we are happy to share our simple grilling secret!

Kikkoman Teriyaki sauce

A go-to-recipe for our family is Mahi Mahi marinated in Kikkoman Teriyaki Marinade & Sauce, grilled in the foil “boat”, then topped with my favorite homemade mango salsa.  This meal is so easy and so delicious.  It is an impressive dish to serve, but it is honestly easier to make than a pot of spaghetti or grilled burgers!

Grilled Hawaiian Fish/ Kikkoman Teriyaki marinade

I simply marinate the Mahi Mahi in a nice layer (about 2 tsbp per piece of fish) of Kikkoman Teriyaki Marinade & Sauce in the fridge for a couple of hours.

Mahi Mahi marinating in Kikkoman Teriyaki

Then preheat the grill to medium-high, and place the fish on aluminum foil.  Folding the foil over and gently pinching it together on top allows the juices to stay in and the fish to cook through, without overcooking!  This Mahi Mahi only took about 15 minutes on medium-high heat on the grill and it was done.  It should flake with a fork easily when it is done.

Mahi Mahi Kikkoman

Teriyaki marinade goes great on almost any fish: Halibut, Tilapia, Cod…and Salmon!

If you’ve been afraid to try cooking fish yourself, I encourage you to try it.  Kikkoman Teriyaki Marinade & Sauce makes this recipe so easy, and the taste is as close as you’ll find to a true Asian teriyaki.

Let me know how it goes, and here’s to summer…and
HAPPY GRILLING!

With Aloha,

Monica

I know I will sound like a “brown-noser” when I type this, but… My family’s fav fish dis is your fish taco recipe! Just yesterday when we finished having salmon for dinner my 7 year old told me it was good but requested white , not pink, fish so we can have “The Grommom” fish tacos. A hit every time!

My favorite way to cook fish is in a pan with olive oil and fresh garlic.
