Are you looking to whip up something FANCY this weekend?…in under FIVE minutes?
Well then, you’ve come to the right place.
By the way–Have I ever mentioned my love for the word FANCY!? There is just something about it…
By the way–You’re not sick of pumpkin yet are you?
No no no, you are not.
Because just a few more weeks of pumpkin, and then it will be all of those fabulous Christmas flavors…Chocolate, peppermint, sugar, egg nog…and more sugar and more sugar (there is no happier word in my boys’ vocabulary than SUGAR.) Just saying the word sugar makes them happy.
But first, let’s make sure we’ve done every pumpkin dessert we can think of. Because that’s what we do this time of year.
OK? Alright?
Especially when they are THIS EASY:
I have heard that they sell pumpkin flavored pudding, but I’ve never tried that. This time of year I keep plenty of cans of pumpkin on hand so I can try new things, and this worked out great! I added the whipping cream to the mix, but you could leave that out, or substitute it with frozen whipped topping.
Here’s how you do it!
EASY PUMPKIN PUDDING PARFAITS
For FOUR individual dessert cups of pumpkin pudding dessert: (or six smaller servings.)
INGREDIENTS:
Graham Cracker Crust:
1 cup fine graham cracker crumbs. (I bought mine–for the first time–already crushed. Because I thought that sounded soooo easy. And it was.)
2 T butter or margarine, melted.
Pudding:
1 box instant vanilla pudding (four-serving size.)
1 1/2 cups cold milk.
3/4 cup canned pumpkin (not pumpkin pie filling)
3/4 cup heavy whipping cream, divided.
1/2 teaspoon pumpkin pie spice
Directions:
1. Combine graham cracker crumbs and butter until well mixed.
Press into bottoms and up sides of six dessert dishes.
2. combine pudding mix, 1/4 cup of whipping cream, milk, pumpkin, and spice.
Mix well with mixer or whisk.
Pour into dessert cups.
Whip the remaining whipping cream until peaks form.
Top each cup with whipping cream, chocolate shavings or chips,
or whatever floats your boat.
**You can always cheat and use cool whip or any store-bought whipping cream.
Fold it into pudding recipe, and top each dish with it.
ENJOY!

We love “fancy”. My kids always quote the above Spongebob episode. It’s only 16 seconds long and all about how to be fancy. You’ll love it.

I don’t think I’ll ever get sick of pumpkin… Peppermint and eggnog, those two aren’t my favorite holiday flavors. I’ll keep pumpkin over them 🙂
I love how simple this recipe is, but with keeping it’s fanciness.
